A spreadable bloomy-rind cheese wrapped in spruce bark, made by jasper hill farm.  Harbison is woodsy and sweet, balanced with lemon, mustard, and vegetal flavors. The natural spruce band, which may be dappled with blue-green flora, creates the structure of a dish so that the top rind can be peeled back for scooping the luscious interior from above. Pair with oaked white wine, raspberry mostarda, and a crusty baguette. Winner of ‘best in show’ at the American cheese society conference in 2018 and 'best American cheese' at the world cheese awards in 2015 and again in 2016. Ingredients: pasteurized cow milk, salt, rennet, cultures. (cows are grazed/fed locally harvested dry hay, supplemented with an all-natural grain ration.)
