Valpolicella Ripasso is a fruity, complex red wine from the Valpolicella viticultural zone of Veneto, in the northeast of Italy. Established as a DOC in 2010, the ripasso method is utilized for the production of Valpolicella Ripasso by combining leftover lees (yeasts) with standard Valpolicella wine for a second fermentation to create a deeper, more character-laden wine.

The Acinum is deep ruby red in color. On the nose it displays aromas of almond and cinnamon. Dry on the palate with a very pleasant velvety taste. Very rich in flavors of cherry, musk, spices and wood.

Pair with steak, chicken and cheeses.

Blend: 70% Corvina Veronese, 20% Rondinella, 10% Molinara - these are the classic, indigineous grape varietals in the Valpolicella red blend.
